Good morning blog world! Friday is here, my friends, so that means it’s time to slow down and get ready for a nice, relaxing weekend right? Or maybe it actually means you’re going to have the longest day in your entire life and then the weekend is so jam packed you’re actually looking forward to Monday? EITHER WAY, you’re going to need a simple dinner or lunch recipe that’s filling and tastes amazing.
As I mentioned in my last post, I am a Paleo eater and LOVING it! I’m actually at the tail end of the 21-Day Sugar Detox that I started on January 1st and lemme tell ya – I. FEEL. AMAZING. Not only are my energy levels higher than they’ve been since I was like 5 but my mood is different. Like being optimistic and positive is the only way of thinking! And when my 3 year old tells me for 40th time that she’s clogged the toilet with toilet paper, it is sometimes a little difficult to remain positive (and CALM!). I’ve also lost at least 5 lbs which is an added bonus!
So, because of the detox I’ve been trying to make meals that I can eat but also that my family will eat. In many cases, it’s a lot easier said than done but what I’ve learned to do is add in ingredients that they eat after I’ve taken my portion out. The recipe being featured today is a really simple ground beef recipe that can be used in a variety of ways. This version satisfied my need for something Mexican with a little spice. You can add or change ingredients easily to satisfy your dietary needs or taste.
Super Easy Mexican Ground Beef
1 lb grass-fed ground beef *
1 red onion, chopped
1 – 4.25 oz can diced green chilies
1 packet of Taco Seasoning (or you can make your own – I LOVE this recipe)
1/4 cup fresh cilantro, chopped
1/3 cup of your favorite salsa (I used hubby’s fave Newman’s Own Black Bean and Corn)
1/2 tomato, chopped (optional)
Big handful of mixed greens (optional)
1. Coat a large non-stick skillet with cooking spray, coconut oil or bacon grease.
2. Over medium-low heat, cook onions to soften them up – about 1-2 minutes, stirring frequently.
3. Add ground beef. Cook until beef is cooked thoroughly and there is no pink showing.
4. Add in chilies, taco seasoning, cilantro and salsa. Let simmer about 5-10 minutes, stirring often to get those flavors mixed together. (This is where I changed things up a bit for my needs. Since the salsa was not Paleo-friendly, I added it in after letting the first 3 ingredients simmer and taking my portion out!)
Make a taco salad by serving over a bed of mixed greens with tomatoes and avocados. If you eat dairy, try a dollop of sour cream or sprinkle some cheese on top! Or you can go the conventional route and throw a hefty scoop of meat into a taco shell with your favorite toppings and crunch away! You could also easily double or triple this recipe for football Sunday and throw this over nachos with some cheese, sour cream, tomatoes and scallions! YUM-O!
*For those of you in New England, you can find grass-fed meats at most grocery stores including Market Basket and Trader Joe’s! If you can’t find grass-fed ground beef, go for the leanest ground beef. You can also check out Tropical Traditions
